Stephen Smith: The Star Inn – Harome

Stephen started his career working for 3½ years under the guidance of 2-Michelin star Chef, Paul Heathcote at Paul Heathcote Restaurant, Longridge.
After this he went on to work with Jeff Baker, who was the first Chef to gain a Michelin star in Leeds, at Pool Court, for 2 years. When Jeff left to set up his own restaurant, J Baker’s in York, he took Stephen along with him and, after a very successful 2 years, at the age of 24, Stephen joined the brigade at The Star Inn at Harome as Head Chef, working alongside Andrew Pern to maintain a Michelin star. During Stephen’s 11 years at The Star Inn, in addition to its Michelin star, this much-loved thatched pub has been awarded 6 out of 10 in The Good Food Guide Guide, won the Top 50 Gastropub Awards 3 times and has never dropped out of the top 5. In addition, it was voted Gourmet Bolthole of the Year, Yorkshire Pub of the Year and Restaurant with Rooms of the Year and the Lonely Planet’s Best Sunday Roast in the World.
Stephen worked with Andrew to set up The Star Inn The Harbour in Whitby in 2017 and is now based solely at The Star Inn as Chef Director, a job he loves for the creativity it allows him to have with food, drink and the management of his team. Tom Parker: The White Swan – Fence

Tom began his career at Northcote Manor, Langho Blackburn (1 Michelin star), at the age of 16 as an apprentice. Worked his way up through the team, winning Young chef of the year in 2011 (aged 21), to finally become Senior Sous Chef at age of 24.
During his time at Northcote, he went on a work placement to De Leest, Netherlands which is a 3 star Michelin restaurant. He spent just over 6 months here.
Wanting to gain more experience (and see a little of the world!), he went over the Mexico for a holiday and ended up staying and working at Capella which is Mexico’s most renowned hotel/restaurant.
Returning home from Mexico he joined a new business venture with friends at The White Swan in Fence in December 2013, and went about changing it from a small local’s pub to a fine dining pub/restaurant. After just over 12 months hard work, Jay Rayner wrote an amazing review of The White Swan for The Guardian (Feb 2015).

James Chapman : The Scran & Scallie – Edinburgh

James Chapman has been part of the team at The Kitchin Group for six years.
Starting at Michelin star restaurant The Kitchin, James then joined the Scran & Scallie and became Head Chef in 2014. Together with the team achieving awards including:

With the recent expansion of The Kitchin Group James now acts as a Group Chef across three restaurants; The Scran & Scallie, The Bonnie Badger and Southside Scran.
Prior to joining The Kitchin group, James gained experience at Racine and Fortnum & Mason in London and studied International Hospitality Management at the University of Surrey
